Homemade Pita Bread

Homemade pita bread... most people would think it's hard to make. I was one of them, but it's very simple and it's worth trying.
The ingredients are: flour, yeast, salt, sugar, and water. That's all! And the flavor of the homemade pita bread, especially when it's fresh out of the oven, is magic.
Warm, fragrant home-baked pita is just simply delicious, and it's exciting to see when the breads puff up in the oven.
Ingredients
1 package of yeast (7g, 2 1/4 teaspoon)
1/2 cup warm water
2 cups all purpose flour
1 cup whole wheat flour
1 1/4 teaspoon salt
1 teaspoon sugar
1 cup warm water
Directions
Dissolve yeast with 1/2 cup warm water and sugar in large bowl. Let it sit until the mixture is frothy about 15 minutes.
Add flours, salt and 1 cup of water. With a wooden spoon or a dough scraper, stir until the mixture forms a mass. Turn dough onto clean work surface and kneed about 10 minutes or until smooth.
Coat lightly with oil and put the dough in large bowl and cover tightly with plastic wrap (I use a shower cap).
Let the dough rise until it has doubled in size (about 1-3 hours, it depends on the environment - temperature and season.)
Heat oven to 475 F/245 C. On bottom shelf of oven, place a heavy duty baking sheet or large cast iron pan.
Punch down the dough and divide into 8 pieces.
Form each piece into a ball, cover them with a damp kitchen bowl and leave for 10 minutes.
Work one at a time, press each ball of dough into a flat disc with your hand or rolling pin to a 6 inch/15cm diameter disc, dust with flour if necessary. Place quickly on hot baking pan. Cook for 2 minutes, carefully turn over with tongs and cook another 1 minute.
